SOFT, MOIST, AND DELICIOUS CARROT LADDUS!
Here is one more Indian sweets recipe for you. This one, my kids loved!
Carrot Laddus!
Made these little balls of goodness with my kid’s and they loved them!
I was inspired to make something with a bright vibrant orange color, similar to a boondi laddu, and decided to use carrots to do the job!
It worked perfectly at giving the laddus the color I was after, adding a wonderful texture.. and I'll never say no to the opportunity of adding extra veggies into something!
I was trying to figure out how to explain what a laddu was without calling it an Indian bliss ball, so I googled it! Here is what I got –
“sphere-shaped sweets originated in the Indian subcontinent. Laddus are made of flour, Ghee/butter/oil, and sugar with other ingredients that vary by recipe like chopped nuts or dried raisins. They are often served at festive or religious occasions.” ⠀
So basically an Indian bliss ball. 😆
Whatever you call these babies, they are chewy, sweet, have that little perfect bit of crunch… basically straight-up delicious, and super festive!

Carrot Laddu
A delicious Indian sweets recipe to enjoy during any festive season
INGREDIENTS
- 12 Medjool dates pitted & soaked in warm water till soft
- 1 cup shredded carrot
- 3/4 cup gluten-free oats or oat flour*
- 1/4 cup shredded coconut
- 1/2 cup cashews
- 1/2 tsp vanilla
- 1 tsp cinnamon (For a more classic Indian flavor, replace the cinnamon with 1/2 tsp cardamom Powder)
- 1/4 tsp ginger powder
- 1/2 cup more shredded coconut for coating (optional)
INSTRUCTIONS
- Put all ingredients except the last 1/2 cup coconut in a food processor and blend till well combined. I personally enjoy the small chunks of dates and cashews but feel free to process longer for a smoother texture!
- If too thick add a little water (use the reserves from the soaked dates).
- Roll into balls and roll in the 1/2 cup coconut to coat.
- Place in the fridge for a minimum of 1 hour to set.
NOTES:
For grain-free, replace the oats with almond flour on a 1:1 ratio
These can be made ahead of time and freeze well too.
