Oven Roasted Bombay Potatoes

All Indian Flavors Side Dish

POTATOES SPICED TO PERFECTION.

If you love potatoes but are tired of the same old preparations, try this recipe!

Today I’m sharing with you one of my favorite side dishes, “Bombay Potatoes”.  Now personally I don’t think you can go wrong with potatoes prepared in any way but this spiced version is a perfect side to spruce up any meal.  These are easy to make ahead and leftovers taste great!. This spiced potatoes are traditionally made stovetop but we’re doing it sheet pan style. I don’t know about you but I find anything made in the oven easier. Easier to prep, and easier to clean up.

Feel free to use your heart when adding the spices. This recipe is very forgiving and perfect for adding your own personal spin to!

To garnish, I’ve used fresh chopped coriander, red chili, and raita, but options are endless.

Oven Roasted Bombay Potatoes

A delicious spiced roasted potato dish

PREPARATION TIME: 15 MIN COOKING TIME: 40 MIN TOTAL TIME: 55 MIN

INGREDIENTS

  • 1 kg / ~2 pounds baby potatoes
  • 2 Tbsp extra virgin olive oil or avocado oil
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp black mustard seeds
  • 1 tsp garlic powder
  • 1/2 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/4 tsp chili powder (optional)
  • 1/2 tsp salt, or to taste
Optional Garnish
  • chaat masala
  • fresh coriander, chopped
  • raita
  • fresh chilis, sliced
  • lemon zest
  • pickled onion

INSTRUCTIONS

  1. Preheat the oven to 200℃ / 400℉.
  2. Bring a large pot of water to the boil and add some salt. Add the potatoes and cook for about 10 minutes on a medium heat until just el-dente. They should still be firm but not raw. Drain and allow to cool then slice in half or quarters.
  3. Add the oil to lined baking tray along with your whole spices (cumin, coriander and mustard seeds) and heat in the oven for 5 minutes. Add the halved potatoes, along with the remaining powder spices and salt.
  4. Toss to combine until fully coated. You might want to use gloves if your nails are painted a light color - the turmeric can stain!
  5. Place in the oven and bake for 45-50 minutes, stirring once about half way through cooking.
  6. Season to taste and top with optional garnish.
