Air Fryer All Asian Flavors Everiday Side Dish

EGGPLANT AND SAMBAL ARE A MATCH MADE IN HEAVEN!

If you aren't an eggplant lover, this delicious rendition might just change your mind!

This eggplant is tangy, slightly sweet, and a little spicy.  Today we are cooking it up in the air fryer or oven, but I have a feeling this would be amazing on the BBQ!

The marinade for our sambal has a few simple ingredients and comes together in minutes.  The star here is the Everiday Sambal which is not only vegan, but also made with no seed oils!    

We first score and salt the eggplant to remove the access moisture, and then pop it in the air fryer or oven to perfectly cook it.  As the eggplant heats, the scores open and absorb all the delicious marinade. 

You want to make sure you keep some marinade left to give the eggplant another good brush before garnishing.  If you are using large eggplants, I would definitely recommend doubling the marinade.  More is definitely better than less here!

Sambal Eggplant

A Southeast Asian preparation of eggplant that is tangy and delicious!

PREPARATION TIME: 10 MIN COOKING TIME: 30 MIN TOTAL TIME: 40 MIN

INGREDIENTS

    Eggplant
    Optional Garnish
    • Cilantro
    • Spring onion
    • Fresh red chili
    • Toasted sesame seeds
    • Lime wedges

    INSTRUCTIONS

    1. Preheat the oven or Air-fryer to 200ºC / 400ºF
    2. To prepare the eggplant, cut them in halves lengthwise. Score the inside of the eggplant in squares making diagonal cuts. The cuts need to be deep but don’t pierce the skin. Season with salt.
    3. In a bowl mix the rest of the ingredients (except the garnish) to make a paste.
    4. Using a brush, marinate the eggplant with the paste. Make sure to reserve about 1/4 of the mixture for a final brush when the eggplant comes out of the oven.  If your eggplants are on the larger side, feel free to double the marinade.
    5. Place some baking paper on a baking tray, lay the marinated aubergines (facing up) and bake for around 30 to 40 minutes. or air fry for 20 to 25 minutes.
    6. Once done, brush on the remainder marinade and garnish with toppings of choice.
