LEAFY GREENS AND FIBER ARE AN IMPORTANT PART OF YOUR DIET. HERE IS A SIMPLE, FAST, AND EASY WAY TO INCORPORATE SOME TAST ASIAN GREENS WITH YOUR NEXT MEAL.
A simple Stir-fry is a great way to incorporate more veggies and fiber in general into your diet.
Fiber plays an important roll in our digestive health, keeping us full, and removing toxins from our system.
So how is fiber used in the body??🤔
Think of fiber as a broom going through your digestive tract. It picks up toxins and old hormones along the way so that your body can eliminate them💩. Fiber is also a prebiotic and feeds your good gut bacteria. Your good gut bugs breakdown the fiber and allow your body to absorb the nutrients.
Lastly, since fiber can be quite hard to breakdown it serves as bulk in your stomach which helps you feel full longer.
Living in Singapore we get many different types of Asian greens so you will often find them on my dinner table. Below is how I prepare choy sum in particular, but this method works for most green veg!
Enjoy.
Stir-fried Choy Sum
A delicious and simple way to get your greens in
INGREDIENTS
- 1 Tbsp Avocado Oil
- 2-3 garlic cloves, minced or sliced
- 1/2 tsp chili flakes
- salt to taste
- 500g / 1 pound Choy Sum, cut on an angle, stems and leaves separated
- 2 tsp sesame oil (optional)
INSTRUCTIONS
- Heat your wok or deep pan on a medium flame and add oil.
- Once hot, add your garlic and simmer for about 30 seconds.
- Next, add your chili flakes and give everything a little mix.
- Now add your Choy sum stems along with some salt. They take longer to cook and you want to give them at least 2-3 minutes cook time before adding the leaves.
- Next, add in your leaves and some more salt. Give everything a good toss and cook for another 2 minutes. You will notice your veggies would reduce in size by about half, so plan accordingly if you are serving a bigger crowd.
- Turn off the stove, drizzle in some sesame oil, and give everything a nice mix. Taste and adjust salt and chili as needed.
- FYI - this is how I prepare most of my Asian greens!! Simply, fast, yummy!
